Ah, another. missing ingredient during a pandemic: butter! This recipe to be pretty straightforward (plus it’s super fun to roll around the balls of dough in the cinnamon sugar mix!). But really do follow the instruction at the end to not overcook, or they will be hard! Also, my mom got creative this time and rather than just making plain circular rounds, after she coated the cookies with the cinnamon sugar mix, she placed a cup over the dough balls and squished them a bit so there would be a nice imprint of the design on the bottom of the cup. Her cookies came out much prettier than ours, although they all tasted great!

Ingredients
For Cookies
- 1 1/2 cups white sugar
- 1 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 3 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
For Sugar Coating:
- 1/4 cup white sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 375 degrees.
- Mix the oil, sugar, egg and vanilla until smooth.
- Add the flour, baking soda, salt and cinnamon on top, then mix everything together to form a thick dough.
- Form the dough into balls and roll each ball in the sugar coating.
- Place cookies a few inches apart on an ungreased cookie sheet, flattening them slightly if desired.
- Bake for 8 to 10 minutes, until slightly brown on the bottom. Do not overcook or they will be hard as rocks (seriously!)
